Cooking Sirloin Tips

Day 60 of Sheltering-in-Place in Panama City Beach, FL. This morning’s statistics for COVID-19 for Bay County are the same: 76 confirmed cases and 3 deaths, and for Florida are 40,982 cases and 1735 deaths. The issue I wrote about in an earlier post about the discrepancies between the Florida Medical Examiner and the state’s statistics for deaths in Florida has made the national news, implying that the state is trying to under represent the number of deaths in the state.

I worked in the yard again this morning, trying to clean up the brick patio and the east side yard. I filled up two trash cans, one mainly of dried up leaves from my magnolia tree and the other with weeds and palm fronds. Unfortunately there was not room for last week’s yard debris.

Then I cooked sirloin tips in the Instant Pot. I combined two recipes, as I liked the ingredients in one and the methodology in the other. I coated the meat with herbs, then sautéed it in batches in the Instant Pot. Next, I sautéed chopped onions and garlic. Then I added chicken bone broth with a little dijon mustard, Tamari, lemon and a dash of hot sauce. I also baked two small golden potatoes in my air fryer and mashed then to go with the sirloin tips. To complete the meal, I sautéed onions and red bell pepper, then added spinach, and a dollop of cream cheese. The whole meal was yummy, I do have to admit.

Tomorrow my book club is going to meet by way of Webex, I will be interested to see how that platform compares with Zoom.
