Cooking Day

Day 49 of Sheltering-in-Place here in Panama City Beach, FL. This morning’s statistics for COVID-19 for Bay County are 72 confirmed cases and 3 deaths and for Florida, 33,690 cases and 1268 deaths. Newsweek had an article published last night that reported that data complied by medical examiners in Florida were squelched by the state. There is a discrepancy between what the medical examiners’ lists from around the state and the Florida Department of Health. And which list do you think is higher?

I woke up way too early and was up by 4 am. After my usual wake up routine, I took a shower and put on makeup and something besides the rags I wear around the house because I was going to have a Zoom meeting with two of my friends. Once dressed I decided this would be a good time to write the letter to the membership of the Bay County Genealogical Society that has been on my mind telling them about our plans for the next few months. As I was doing this, my friends and I started texting and we decided to have our Zoom meeting tomorrow.

So I changed back into my usual at home attire and was starting to pack up a few things and go to the studio. Then I remembered I needed to make a batch of chili if I wanted anything for lunch and dinner. This was the first time I had make it in the Instant Pot and it turned out pretty good. By the time it was done it was almost lunch time, so I worked on a few of my little piles, then ate lunch. After lunch my lack of sleep caught up with me, so I relaxed and did an on line jigsaw puzzle.

Almost every morning I have an egg over medium for breakfast with home made hash browns and fruit. I ate the last of the potatoes this morning, so I figured I better make some muffins to sop up the egg yolk. I used to have a recipe for muffins that was gluten free that I liked but I couldn’t find it so I spent some time researching a suitable recipe. I have been eating gluten free for years. Avoiding gluten was reinforced last year when I went on the Whole30 program for 30 days. When I began introducing various foods back into my diet, the only bad reaction I had was to wheat.

My daughter Mary picked up some avocados for me at Wal-Mart today. When she came by I gave her a dozen of the eggs I got from Susan a few days ago and she gave me the avocados. We chatted in front of the house about her frustrations trying to get unemployment insurance as a 1099 employee here in Florida.

I usually have three books going at a time: an ebook, an audible book and a real book. I find that when I’m driving, walking, cooking or working in the studio I like to listen to audible books. I download them from the local library. I usually like to listen to something that has some action in it and on the light side, because my mind does wander some. Right now I am listening to Zero Day by David Baldacci, narrated by Ron McLarty and Orlagh Cassidy. They are both good narrators which is super important in audible books.

I never made it to the studio today, but tomorrow is another day.
